Production criteria:
. Selection of the over-ripe grapes;
. Picking golden grapes by hand selection;
. Slow alcoholic fermentation in oak barrels;
. One-year maturation in barrels, stirring the lees regularly.
Tasting notes:
Clean yellow color with gold nuances;
Powerful and intense nose with oral sensations, some characteristic fruit aromas of the Chenin Blanc variety (apricot, quince) complemented by notes of vanilla and toast;
Rich and fresh palate recalling the oral avors of the nose followed by long and delicate back palate with the subtle taste of aging (vanilla, toast, wood).
This full-bodied white matches perfectly with:

. Goat cheese.
