Soil: Alteration of schist, Clay-limestone
Production criteria:
. Harvested by machine when fully ripe ;
. Juice kept at cold temperature for four days before fermentation to develop varietal typicity;
. Temperature-controlled alcoholic fermentation at 15°C;
. 30 to 40% of the wine undergoes malolactic fermentation with the co-inoculation method softening the acidity and preserving the flavor of the grape;
. Maturation on thin lees until filtration and bottling in mid-January.
Tasting notes:
Clean greeny-yellow color;
Dynamic nose of acacia, peach, citrus and nuances of almonds and nuts;
The palate is fresh, fruity and soft. It displays a good balance between alcohol and acidity.
