Description

Grape Variety: Chardonnay (50%), Chenin (25%) and Grolleau gris (25%)
Soil: Slate and alteration of schist

Production criteria:
. Careful selection of the cleanest grapes, picked by hand in cases;
. Delicate pneumatic pressing, and selection of the purest juices;
. First alcoholic fermentation performed in stainless steel tanks;
. After the second fermentation in bottle, the wine remains on its lees for 12 months to develop complex fizziness and aromas.

Tasting notes:
Pale straw color with green reflections. Fine mousse and persistent bead;
Delicate and refreshing sparkling wine with acacia, citrus, apricot and peach bouquet. The time spent on lees produces additional aromas of brioche, almonds and nuts;
The mouth-feel is smooth and fresh with almond and dried fruit tastes concluding with a lingering finish.

Easy to drink on its own, this wine can also be matched with:
. Fresh or minty starters (tzatziki…);
. Shellfish (oysters …);
. Many pastries and ice-creams….
