Terroir : Slate and alteration of schist
Production criteria:
. Meticulous selection of the cleanest grapes, picked by hand in cases;
. Delicate pneumatic pressing and selection of the purest juices;
. First alcoholic fermentation performed in stainless steel tanks;
. After the second fermentation in bottle, the wine remains on its lees for 12 months to develop complex fizziness and aromas.
Tasting notes:
Raspberry pink with purple reflections; fine and delicate bubbles;
Tempting nose with subtle red fruit notes (strawberry, cherry, raspberry) and fresh avors;
The first palate is soft. A dash of candy and red fruit in midpalate. The finish is long and buttery (brioche).
This wine could well be served:
. As an aperitif with a group of good friends;
. With a salmon let in sweet sauce;
. With most red fruit desserts.
Preservation:
4 à 6°c.
